Stage Applications Development Functionalities Whey Protein
Fonterra wants to better understand the functionality of whey protein concentrate (WPC) when used in normalised food applications. Four different focussed applications will be studied, with different trials comparing WPC addition rate and the impact when compared to a control.
The goal outcome is to better understand the benefits and challenges of WPC when used in these applications and provide our customers with guidance on the use and application of the WPC.
Azelis is the official reseller/agent of Fonterrra in France.
Guided by Fonterra NZMP , the candidate will develop a trial plan to investigate four focus applications where we believe the WPC provides unique benefits:
The trial plan will review what formulations and recipes are typically used in industry and establish a control basis for each application. The applications will be prioritised based on customer demand and foreseen benefits.
The developed formulation will then be tested with differing addition rates of WPC, to observe how this impacts the:
- Nutritional Values
- Visual Appearance
- Organoleptic Properties (taste, mouthfeel, smell etc.)
- Textural properties
- Processability (time to prepare, each of processing, etc.)
